Cucurbita pepo (85-90 days) The classic heirloom alternative to pasta, dating back to 1890! In a class of its own, the flesh of this unique squash literally falls way from the shell in long strands! It’s also known as the Gold String squash. The strands look like spaghetti and retain a tender ‘al dente’ like texture with a slightly sweet, nutty flavor. Bake or steam, fork the flesh from the shell, and top with your favorite Alfredo, pesto, or spaghetti sauce. Or simply butter, salt, and enjoy! This special ‘kid-friendly’ variety will become a family favorite! Especially great as a low-carb, gluten-free alternative.
Growing Notes
Sow outside (recommended) 1 -2 weeks after your average last frost date; soil temperature should be 70-85°F. If needed, start indoors 2-4 weeks before your average last frost date and transplant when soil temperature is at least 65-70°F. Days to emerge: 5-10 days. Seeding Depth: 1/2-1”. Plant spacing: 12” in rows 6 feet apart. Full sun. Moderate con- sistent moisture. Harvest before first frost when the rind is hardened, so it can’t be dented with your fingernail.
